I had a few pears lying around that just were not ripening right. So I decided to bake with them and used Butter together Kitchen's low carb apple crisp recipe. I modified it slightly by putting it in muffin tins for small servings and substituting honey from splenda and flaxseed/water for xanthan gum . Let’s start off by saying OH MY GOD….this is DELISH! It does take a bit of work and you need to set aside some time but it was so worth it. Recipe is from https://www.howsweeteats.com/2019/02/cauliflower-gnocchi/ @howsweeteats It says it makes 4 servings but the servings in my opinion would be small. I doubled the recipe and found it made 4 good sized portions. Costs with a double batch were $8.79 including fancy parmesan as a topping and pasta sauce. We added a side of green beans too. I have been trying to reduce the amount of carbs that I consume and have been experimenting with zucchini as a substitute for pasta. This recipe is by far my favourite. 10/10 for sure. It is just the right amount of garlic. I didn’t use the cornstarch since I have a corn allergy and I used cherry tomatoes instead of regular tomatoes. Cold weather definitely makes you crave comfort foods. This beef stew is delicious. 9/10 rating from my family. Paired it with a nice crisp chunk of bread.
